Breakfast Sweet Potato Fries with Almond Butter (Air Fryer)

Sweet potato fries for breakfast?  Why not?  They’re crispy on the outside and tender on the inside.  Slightly sweet with a drizzle of almond butter, they’re fantastic!  I use a Ninja Foodi, so I’ll be giving directions for that. But, you can absolutely use your oven!  I would roast at 400 degrees for20-25 minutes on an oiled cookie sheet, flipping potatoes over halfway through the cook time.

These could serve 2 people but I ate the whole thing, it was so good!  No judging! You could also enjoy these as a snack…enjoy!

  • Preheat air fryer, set to 390 degrees, for 5 minutes. While preheating, cut sweet potato into long fries, 1/2 inch wide, length of potato. Put into a small bowl and mix with oil, pure maple syrup and ground cinnamon, making sure each fry is covered with all ingredients. Refer to your air fryers instruction manual for temperature and times for air frying sweet potatoes. Mine is a Ninja Foodi and suggests 390 degrees for 15-20 minutes for 1 pound of sweet potatoes. Put fries into basket of air fryer, close lid and set to 17 minutes. *see notes
  • Halfway through the cook time, open air fryer and mix fries so that they are not getting too done on one side and not the other. Close lid and continue cooking. When there is 1-2 minutes left in cook time. Measure out the 2 Tablespoons of almond butter into a small microwaveable bowl and microwave for 10-15 seconds, until melted and smooth. When air fryer timer goes off, take fries out and put onto a plate. Using a spoon, drizzle almond butter over the fries. Let cool slightly (they are hot!) and then dig in! Enjoy!

Notes

*If using your oven, make sure oven is preheated to 400 degrees.  After mixing up fries and oil, maple syrup and cinnamon, put on a slightly greased cookie sheet or a cookie sheet lined with parchment paper.  Bake for 20-25 minutes, turning fries halfway through the bake time.  After bake time, remove from oven and drizzle with almond butter.
