Greek Kalamata Olive Hummus

My husband and I went to Greece a few years ago and can’t wait to go back!  The clear blue skies and clear blue water are amazing…absolutely beautiful!  And the food, oh my gosh, the food!  When you order a Greek salad, you will be served thumb-sized chunks of feta on your salad and the veggies are so fresh!  Wherever you go in Italy and Greece, salads are served with vinegar and oil for your dressing.  No Ranch dressing to be found!  It’s so refreshing.  Along with my Greek salad, my husband had baked feta covered in tomatoes and olive oil and Greek seasoning.  Since this trip, we have followed a mostly vegan diet, so don’t get much feta anymore but, besides the feta cheese, we also fell in love with the olives and were fascinated by the olive trees!  They grow in abundance all over Greece and are so pretty!  We love olives…and especially kalamata olives.  They have a buttery texture and work so well in this recipe!  By the way, the hummus in the main picture is in a bowl made from olive tree wood and the tool pictured is made to help get olives out of a jar or the bowl.  It is also made from olive tree wood!

Making Your Own Hummus Is Easy!

I love making my own hummus!  It’s so much more fresh than store bought and so easy to make!  You will need a food processor or a very high speed blender for this recipe.  I also make my own hummus because I don’t put any oil in the recipe…saves on calories and fat!

Tips:

You will need a Greek seasoning for this recipe, but the seasoning is readily available at any supermarket!  Serve with baby carrots, snap peas, raw broccoli, bell pepper strips, tortilla chips, pita chips or pita bread.  You could also use this hummus in a wrap!  Enjoy!!

  • Combine all of the ingredients in a food processor and process until smooth. Stop processor occasionally to scrape down the inside of the bowl. When finished, transfer to a fridge safe bowl, cover and chill. Serve with crudite, tortilla chips, pita chips or pita bread. Enjoy!!
